We took a tour out to Modena today. We had a car pick us up at our hotel and we spent eight hours exploring the bread basket of Italy.
Reggiano Romagna is know for so much of the food we think of as Italian.
We went to a medium-sized producer of Parmigiano Reggiano. It was so cool to learn about the years it takes for Parmigiano to get to our tables.
We tasted 24, 36 and 80 month old Parmigiano.
We then went to a small prosciutto factory. Gary was the host and he was amazing. He was so into his craft, you got excited just listening to him explain everything.
Lucky for us, they weren't bringing in pigs on the day we were there. Gary took us through the years of aging including when they first salt the pork. There were about 10 rooms, each with prosciutto of a different age, different temperatures, different humidities.
We saw the tattoos the pigs get and how to tell Italian hams from other EU ones. Quite an education.
We had a fabulous meal at the shop including homemade pasta and dessert from Gary's mom. He cut this platter for us. Unbelievable.
We ended up at a winery. Great day.
